How about buying a beef animal for Christmas and sharing it with family and friends. You can buy a whole animal, a half or a quarter directly from the farmer. People selling beef are listed on What is grown locally. You can chose from organically reared beef, grass fed beef, corn fed beef and red veal. You will find it is very economical to buy a whole animal.

Speak with a farmer and he or she make the arrangements with a local abattoir. The local abattoirs are licensed and government inspected. The butcher will prepare the meat in the way you want i.e. into roasts, steaks, stewing beef, ground beef or sausages and will package it in the qualities you want. You pick the frozen meat directly from the butcher and store it in your own freezer. You can buy smaller quantities directly from a butcher or meat store.
