Globally, almost 320-million kilograms of mustard are consumed each year. Canada is the largest exporter of mustard seed in the world, with the vast majority of the mustard crop being grown in Saskatchewan. Canada became a heavyweight in mustard production during World War II when the industry in western Europe – its historical heart – was disrupted. The oldest and largest mustard mill in the world, G.S. Dunn, is located right here in Hamilton.
