The first tapping is a celebration of the beginning of the growing season. This year it was at Terry and vicki Gervais’ Trillium Ridge Sugar Works at 254 Maple Sugar Road in Tyendinaga, on February 25. Ron Hubbs president of the Quinte Chapter of the Ontario Maple Syrup Producers Association speaks about the history and romance of maple syrup. It is an organic product made in sustainable managed maple woods.
